Raw Chocolate Truffles

This is a simple, but amazing truffle recipe that is so easy and fast to make:

1/2 cup coconut oil (when melted)
1/2 cup finely ground cacao nibs
1/2 cup goji berries
1/2 cup cacao powder
1/2 cup mesquite or lucuma
2 tbs agave nectar
1 tbs vanilla extract
Tiny pinch of Himalayan pink salt (optional)

Grind nibs & goji berries together
Gently melt coconut oil in pan (low heat)

Mix gojis and nibs together with all the other dry ingredients and poor into this the vanilla, agave and coconut oil. Sprinkle the salt in at the end (optional).

Spoon into ice cube trays (preferably heart shaped ones) and place in the fridge if your patient, or freezer if you are desperate to taste. 
Roll into balls with your hands and then coat in Cacao powder.
